Udderly Different

Goat dairy offers an alternative to cow dairy, with its own flavour, texture, nutritional profile and culinary uses. Both come from animal milk, both contain lactose and milk proteins, and neither option is right for everyone.

This guide compares typical whole goat and cow milk while explaining the practical differences that may influence taste, cooking and individual preference.

Taste and texture

Goat dairy

Often creamy and full-bodied, with a distinctive, slightly tangy flavour that varies by product, freshness and processing method.

Cow dairy

Generally milder and more neutral, with familiar flavours and a broad range of widely available products.

Goat mozzarella, cheddar and marble cheese are very similar in flavour to their cow-milk counterparts, while some aged goat cheeses such as brie may have a more pronounced flavour. The product and preparation method often influence the experience as much as the source of the milk.

Digestion, lactose and milk allergy

Lactose

Both goat and cow milk contain lactose. Goat milk is not lactose-free.

Lactose intolerance

Occurs when the body has difficulty digesting lactose. Individual tolerance can vary, but changing the animal source does not make the product lactose-free.

Milk allergy

Is an immune reaction to milk proteins and is different from lactose intolerance. Goat dairy primarily contains A2 beta-casein and lacks most of the A1 beta-casein found in cow milk.

Important allergy information

Health Canada states that the proteins in cow milk are very similar to those in goat and other ruminant milks. People with a diagnosed cow-milk allergy are therefore likely to react to goat milk and should consult their allergist before consuming it.

Cooking with goat dairy

  • Goat milk can be used in beverages, sauces, soups and some baked recipes where its flavour complements the other ingredients.
  • Goat cheese ranges from soft and mild to firm and aged, offering different textures and intensities.
  • Goat yogurt and kefir can be used in breakfasts, dressings, marinades and baking.
  • Substitution results vary because fat, moisture, acidity and flavour differ between products.

  • Goat milk is dairy; it is not a dairy-free alternative, as it contains lactose and milk proteins.

Cream without the cow

A smoothie built on goat butter, and a frozen dessert made entirely without dairy. Both show how the alternatives behave where a recipe would normally reach for cow milk or cream.

Pumpkin Pie Smoothie

Blender

Ingredients

  • ½ cup unflavoured protein powder (Good Protein)
  • 1 tsp pumpkin spice
  • ¼ tsp salt
  • ¾ cup plain pumpkin purée
  • 1 cup pea protein milk
  • ½ cup coconut cream
  • ½ cup goat yogurt
  • 3 tbsp agave
  • 1 tsp vanilla

Directions

  1. Add all the ingredients to a blender or blender cup, along with an ice cube or two if you like.
  2. Blend until smooth and creamy, then serve immediately and enjoy.

Vanilla Coco Freeze

No churn — shaken in a bag of iced salt

Ingredients

  • 2½ cups canned coconut milk
  • ¼ cup collagen powder
  • ⅓ cup agave syrup
  • ¼ tsp xanthan gum
  • ⅛ tsp sea salt
  • 2 tsp vanilla extract
  • Ice and ¾ cup salt, for the outer bag

Directions

  1. Combine all ingredients in a small re-sealable bag, press out all the air and seal.
  2. In a large bag, combine the ice and ¾ cup salt, then add the small sealed bag of mixture.
  3. Shake for 7 minutes, or until the mixture has thickened.
  4. Serve immediately, or freeze.

Add cocoa powder or fruit for other flavours.
